  1. Break eggs into a bowl and season with salt; Beat well with a whisk
  2. Heat oil in a pan, fry chopped scallion until fragrant, then, add the eggs
  3. Use a spatula to briskly stir the eggs
  4. Dish out when the eggs are cooked
Recipe Notes

-Make sure you use enough oil and cook the eggs over high heat for a better fragrance.
-For a more delicious texture, add some water or fresh milk to the egg mixture.
-Besides scallion, you can also add chives,basil, ham, sausages, bacon, shrimps or onions.
